Caramel Custard by Tay Villon

Last weekend, I decided to visit Ipoh, Perak since I have friends who are the local people over there to explore the tasty food in Ipoh town. On that day, i also visited a restaurant which called Thean Chun and it located at old town in Ipoh. I am sure that all of you must be curious about the food. So let us begin our journey to the Thean Chun hahaha..

What is the food that selling by Restaurant Thean Chun??? Let me tell you, it is caramel custard. Caramel custard is a very popular dessert in Malaysia. First introduced by the Portuguese in the 1500 and sold until today, this dessert is popular served in restaurants, cafes, hotels and even Ramadan bazaars for breakfast. Looks so yummy right???

Caramel custard is the signature of Restaurant Thean Chun, it is really smooth, not too sweet and it can melt in your mouth very fast. Imagine it and your mouth is watering. Hahahaha!!! So caramel custard not just only attract youngster, it also attracts a lot of eldest to visit this restaurant and enjoy their caramel custard. The moment when an old man brings his grandchild to this restaurant and eat the custard...Can you imagine that??? So nice....
Restaurant Thean Chun is very famous in Ipoh. Every weekend Restaurant Thean Chun will be crowded by people and they are willing to wait for the seat although it might take a long time. One of the reason why people willing to wait is because Restaurant Thean Chun serve the food with the best service to their customer. Most important thing is each of the caramel custard cost RM 3.50. Worth it right???

Ding Ding Candy by Ku Min Shen

Last week, I was visited Ipoh with my family. Suddenly, I found Malt Candy (贵妃糖) or commonly referred to as “Ding Ding Tong” (叮叮糖) at Ipoh; directly nearby Restaurant Thean Chun , which mean in front of the Concubine Lane. You will definitely could found a bicycle that carry the Malt Candy.

“Ding Ding Tong” is a type of candy in Hong Kong and this Malt Candy has around 100-year history. Malt Candy is normally created in a big chunk size. The main composition of the candy are sugar and maltose with sesame. Upon cooling down, it will form a chunk of sugar. It is topped with some white sesame seeds and this really makes the candy's taste better and delicious. 

When I make an order, uncle will only start to slice some small pieces from the big block by using the unique tools which are the hammer and the cutter.

That things make me interested about this candy is the sound of Ding Ding Candy because the slicing process will carry out the sound of “ding ding ding ding ding” when 2 metals are collided. Besides that, the sound of “Ding Ding Tong” will attract customer to buy and taste it especially children. My dad told me that this sweet rhythm will always stay in his memory as it will bring out some of sweet child hood memories. 

Furthermore, the Malt Candy have two flavours which are original flavour and mint flavour. The price of Malt Candy also reasonable. Each pack of original flavours is RM 6 and mint flavours is RM 7. I strongly recommend you all to visit here as the taste is very nice at all. If you are candy or sweet lover, you may visit here AS SOON AS POSSIBLE. Ding ding candy is waiting for you hahaha.

Most of the restaurant in Kampar, Perak offers 2 different flavours to be selected which are herbal chicken and curry chicken. For those who can’t stand the heat will definitely prefer to have the herbal chicken but the best “Golden Pillow Bread” which also called as the curry chicken. "Slowly slicing the big golden bread open to revile the delicious curry chicken that is wrapped by the soft bread bun" Can you imagine that??? So DELICIOUS!!! Many consider this as the greatest combination of food in the world and for some may even consider this as the match that made from heaven hahahaha.

Some particular travelling trips to Kampar will definitely patronize this trip to a famous restaurant called Restaurant Yau Kee which is located at the town centre along Jalan Idris. This restaurant is a favourite stop for many travellers who want to try the famous Golden Pillow Bread. The curry chicken wrapped around with freshly rolled dough and the bread have to be baked until it is golden. It is just the most mouth-watering experience that anyone will have. The aromatic smell of the curry and the fragrant of the bread almost can make anyone dream about even after having it for the first time.

We also provide some recipe for you to make your own Golden Pillow Bread. It doesn’t look simple at first to follow all this steps but the end result of enjoying the delicious Golden Pillow Bread is the most satisfying part of all. So what are you waiting for, drop all your things and try it out!

Basic Sweet Bread Dough
(adapted from "Magic Bread" by Alex Goh) 
Ingredients A:
100gm bread flour
70gm boiling water

Ingredients B:
300gm bread flour
100gm plain flour
80gm sugar
6gm salt
20gm milk powder
9gm instant yeast

Ingredients C:
175gm cold water
60gm cold eggs

Ingredient D:
60gm butter

Method:
1. Add the boiling water from A into flour, mix until well blended to form dough. Cover and set aside to cool. Keep it into refrigerator for at least 12 hours. 

2. Mix B until blended. Add in C and knead to form rough dough. Add in A and knead until well blended. 

3. Add in D and knead to form elastic dough. 

4. Let it proof for 40 minutes. 

5. Divide the dough into required weight and mould it round. Let it rest for 10 minutes and ready to use. 

(my notes : to make two loaves of golden pillow bread, I did a 1-1/4 recipe. I put everything in the bread maker!) 

Ingredients for Curry Chicken:
50gm oil
50gm curry spices
8 shallots
500gm chicken
1 stick lemongrass
2 sprigs curry leaves
3 potatoes
6cm cinnamon stick
1 pc clove
250gm coconut milk
1-1/2 tsp salt
250gm water

Method:
1. Heat up oil in pot, add in curry spices and shallots, stir-fry until fragrant.4 

2. Add in chicken, lemongrass and curry leaves, cook until fragrant. 

3. Add in water, potatoes, cinnamon stick, salt and clove, stir well and continue to cook for 20 minutes. Add in coconut milk and bring to boil. 

4. Remove and set aside to cool it. Take 500 gm of the curry chicken and wrap it with aluminium foil or grease proof paper. 

5. Roll out the sweet bread dough. Place the wrapped chicken filling in the centre of the dough and wrap it up. 

6. Let it proof for 45 minutes. 

7. Bake at 175 C for 25-30 minutes.

Ding!!!! You can eat it hahahaha!!!

Hong Kee Mah Chee and Fa Sang Woo (Sweet Peanut Broth) by Chooi Ka Khui

Whenever I think of dessert, my mind comes out with this, Hong Kee Mah Chee and Fa Sang Woo which located at Ipoh. Somehow my opinion towards desserts is very strict, but their desserts keep in my mind, even the taste is still fresh in my taste buds. So now I have given the chance to tell you why their desserts attracted me for so long until now I am still unable to forget. Their stall is almost hidden under some shady tress on Jalan Queen in Pasir Pinji. Although their stall is small in area but it does not stop them to run this business because their customers are really willing to stand and enjoy their desserts.

According to their stall owner, they have to wake up at 4 a.m. in the morning to prepare the sweet peanut broth including milling the peanut, sesame and other ingredients into broth and slowly cook them for five hours by fuelling the fire with charcoal, the most traditional way of cooking. I think this is why this business can be run for more than 80 years and carried on to fourth generation.

Filling with love and patient, I felt grateful to get to enjoy this delightful dessert. Besides of sweet peanut broth, their mah chee is their secret weapon. It seems small in portion but it has to put a lot of effort to make this. The chewiness, softness and firmness of their mah chee make it the best seller in Hong Kee Mah Chee. The stall owner said that they always take ‘using the best material’ as their top priority. This is why I am fallen into the charm of their sweet peanut broth and mah chee. I really recommend readers to come to enjoy their dessert and it really worth a try. So dear readers, JUST GO FOR IT!!!!
